Watergate Salad

Watergate Salad
In the company I worked for a few years ago, we celebrated "the 12 days of Christmas", which basically was people bringing different foods for 12 days leading into Christmas. I looked forward to the twelve days. All the yummy food that everyone brought, new things that I'd not tried before and in some cases, never even heard of! That was fun! One of my colleagues would bring this wonderful tasting dessert every year. It has a not-so-interesting name "Watergate Salad" but tastes wonderful and is very simple to make. The prep time is all of 3 minutes and there's no cooking time. You've gotta love that! We had some friends over for dinner the other night and I made this dish. It was an instant hit! Here's the original recipe from my ex-colleague.


Ingredients:
1 3 oz packet Pista Pudding mix
1 20 oz can Crushed Pineapple
1 cup Cool Whip Lite
1/2 cup mini marshmallows
1/4 cup crushed pecans

Method:
In a bowl, mix the can of crushed pineapple (do not drain the liquid from the can), the pudding mix and whipped cream together. Whisk well so that it's well blended. Mix in the marshmallows and pecans. Garnish with more crushed pecans. Refrigerate for an hour. That's it!
The original recipe calls for 1 packet of pista pudding mix. I used 1/2 packet pista and 1/2 packet vanilla pudding mixes.

Never ever heard of or tried this before....but with marshmallows and pineapple in it, Iam sure it is delicious.

Going off track here - I'm curious how non-desis would pronounce your name. With simple name like mine, I'm called van-ee, when they see the spelling. And when they hear my name they spell either "vonnie" or "vanni"! It must be a task getting them to pronounce yours :) BTW, I think it's a very pretty name.

Where do you get this pista pudding mix - I've only seen vanilla/chocolate pudding mixes, I'll have to look harder.
Think this can this be made without marshmallows? They contain gelatin, right?

Nee- You should be able to get it in a regular grocery store, along with the vanilla and chocolate instant pudding (or pie filling) mix packets. I've seen Jell-o and Royal brands here. There may be many other brands too. This can be made without the marshmallows too and would still taste great. I believe marshmallows do contain gelatin.

We planned to go to Myrtle Beach earlier this year but somehow it never worked out. Continental had a great deal a few weeks ago but it would be the first time flying with M and we are just not prepared for that yet. Hopefully, we'll actually go there sometime! (N & I are great at planning but not executing them!)

oh wow this looks delicious and easy ...just one quick question to ask ..can i substitue pista pudding with just vanilla? just let me know if it will still taste good bcoz i have vanilla pudding stocked up in my pantry and wanted to try out some new recipe and yours came out just in time ..

Rooma- Pudding mix is the instant pudding mix packets you get in regular grocery stores. They are also called pie filling mixes. Popular brands are Royal and Jello.

Indosungod- Yeah, right? It IS a weird name for a dish, that too a dessert! Probably it was first made at the Watergate hotel? Hey, you never know. That just might be the reason for the name! :)
