Plain Pulao, Egg Curry & Potato Wedges

This is my entry for "P" of Indian Vegetables hosted by Nupur of One Hot Stove.

Plain Pulao:

1 cup rice (uncooked)
1 cup milk
1 cup water
1 tsp fennel seeds
2 red chillies
2" cinnamon
3-4 cloves
2-3 cardamom
2 bay leaves
1 star anise
1 small onion
2-3 pods garlic chopped
1/4 cup cilantro chopped
2-3 Tbsp oil
Salt to taste

In a pressure cooker, heat oil. Add the whole spices and fry until fragrant. Add onions and garlic and fry until onions turn golden brown. Add rice and cilantro and fry for a couple minutes. Stir in the milk, water and salt to taste. Cover and cook until done (2 whistles in my cooker).

Egg Curry:

4 eggs hard boiled halved
1 medium Onion
2 plum tomatoes
3-4 cloves garlic
1/2 tsp saarina pudi/sambar powder
1/2 tsp Kitchen King Masala
1 tsp cumin powder
1/5 tsp tamarind paste
1 tbsp tomato ketchup
salt to taste

Heat 1tbsp oil. Add garlic and onions and fry for a few minutes. Add chopped tomatoes and fry until well cooked. Add salt, milk, saarina pudi, kitchen king masala and ketchup. Keep stirring until it comes to a boil. Finish with cumin powder. Arrange eggs in a serving plate. Pour the mixture over eggs, garnish with cilantro and serve.

Potato Wedges:

1 Large potato, cut into wedges, boiled in salt water
1/4 tsp cumin powder
1/4 tsp coriander powder
1/8 tsp hing
red chilly powder & salt to taste
2 Tbsp oil
1/4 cup rava

Mix items #2-6 together. Coat wedges in the mixture and dredge in rava. Shallow fry on all sides in a pan or bake until crisp. This recipe is my variation of Batata Phodi, a Konkani recipe that my mil makes.

Your Egg curry is different from Egg Masala. I did not understand this... Kitchen King Masala???

Chithu- hi! Kitchen King masala is available in Badshah & MDH brands in Indian stores. They are like a mild garam masala but enhance the flavor of any dish. A little goes a long way with this.

Using Milk in the pulao is such a great idea....this one I am going to try tomorrow, Vani and let you know, I do love the pressure cooked Pulaos! So, so easy!!
Those potatoes look grand! but egg curry is not for me....I don't eat eggs... :(

Sandeepa- until i saw recipes from Seema, Sup and Sowmya, I had never thought of trying kitchen king masala, even though I'd heard of it and seen it. it sure is a great flavour enhancer, isnt it?
potato wedges were real easy to make, San. Do try it sometime! :)

Trupti- I love my pressure cooker too! Dunno what I'd do without it! Makes thing easy and FAST! Do let me know if u tried the pulao, T. Will pass on your hugs to Gudiya!

wohoo...kitchen king rocks:) i got my pack of kitchen king from india as it was highly recommended by my mom:) and as we know mom's r always right;) i too use milk while making pulao as it gives that rich taste with out using much of ghee. lovely pics vani...got to try ur batata phodi...
