Spinach Bhath

This is my entry for JFI-Rice hosted by Sharmi of Neivedyam and also my first entry for RCI-Karnataka hosted by Asha of Foodie's Hope. Thank you both, ladies!

The key ingredient here is the masala powder we call Palyada Pudi or Vangi Bhath Pudi. Bhath(masala rice) can be prepared with any combination of vegetables, the classic ones being eggplant and potato/capsicum. See also my recipe for Cabbage Bhath.

3 cups cooked rice
1 bunch of spinach, chopped
1 medium onion chopped
1 Tbsp Palya/Vangi Bhath Pudi
2-3 cloves of garlic chopped
Salt and Lime juice to taste

2 Tbsp oil
Mustard seeds

Heat oil and do the tadka. Add garlic and onion and fry until onions are translucent. Add spinach and saute until cooked down. Add rice, salt, lime juice and vangi bhath powder and mix well.

Cooking from the Blogs

Thai Eggplant Basil from Recipe Junction. I added some greens from my spring mix salad bag. Easy to make. Very authentic & very, very tasty.

Spinach Adai from Kritika of Manpasand. Love the fact that there was no fermentation time. Very nutritious with the dals and spinach. Delish!

Sajjige Rotti from Spice Corner. Simple to make and absolutely delicious! You guys must check the link for Supriya's pictures. They are so beautiful! Mine does no justice.

Ringan Batata Shaak from The Spice Who Loved Me (I love the name of the blog!). Very tasty and pretty quick to make too. Thanks, Trupti!

Paneer Shimla Mirch from Shilpi's recipe. I made mine a little less dry. Very yummy!

Methi Malai Matar from Hooked on Heat. I used half & half instead of yogurt. It was delicious!

M's First Birthday

M crawls no more! She has started to walk full time, so to speak! Since she has just learnt to walk, she just cannot stop! She just walks and walks - sometimes in circles too. She just wants to keep going- somewhat like "I don't know where I'm going but I'm on my way!"

Here are some pictures from M's birthday. It was a fun first birthday, at least for us. Made all the more special with the presence of 2 sets of grandparents, an aunt who came all the way from India and another aunt from Utah. M had an ear infection but what a trooper she was!
