
Ingredients:
6-8 small eggplants
For the stuffing:
2 tbsp dry coconut shreads
1/4 cup roasted and powdered peanuts
1 tsp roasted and powdered sesame seeds
1 large onion, chopped fine
2 cloves of garlic, crushed and chopped fine
1 tbsp cilantro, chopped
1 tsp goda masala
red chilli powder, to taste
salt to taste,
1/4 tsp tamarind paste (original called for lime juice)
1 tsp brown sugar (or jaggery)
For tadka:
2 tbsp oil
mustard seeds
asafoetida
turmeric powder
Method:
Mix all the ingredients for the stuffing.
Remove stalks of eggplants and make two slits without cutting them all the way thru. Stuff the mixture into the eggplants. Keep aside.
Heat oil in a pan and do the tadka. Put the eggplants in the oil, slit end down. Cover with a plate. Pour some water on top of the plate. This apparently keeps the eggplants from sticking to the pan. Neat tip there! After a couple minutes, turn them on their sides and rotate every few minutes.
Add the remaining stuffing. Mix well. Cover and cook for another 2 minutes.
Add 1/2 a cup of water and cook until eggplants are done.
Remove to a serving bowl and garnish with some chopped cilantro.

I must have been a very odd kid then, cos I looooved eggplant since I was very little. Your pics are too tempting. Have to get some Indian "brinjals" and make this. Have a wonderful long weekend.

Looks awesome Vani. I hated a lot of vegetables as a kid but eggplant was not one of them. I was ready to eat them in any form weird I guess.

Iam one of those who loved all kinds of veggies as a child....I don't think I've ever said no to anything except cooked jackfruit.

I think you are right... Most of the kids I knew when I was a Kid loathed Eggplants.. but now as an adult most of us love it. May be it is something to do with the texture, which is appreciable after repeated attempts :)

Aaaah I love stuffed bengan.... but cant cook it as my hubby doesnt like bengal and i dont feel like cooking for me alone :(

Lol, eggplants and I would run to the North Pole ;) when I was a kid ... now I love these kind of dishes...the love - hate relation with veggies is experienced by all I guess, it seems funny when we look back on the childhood days alwa :)

heheh..even now I don't like certain veggies..shhee..pls don't tell anybody ok..:)..but somehow since my dad loves brinjal, it was cooked abundantly and hence there was never a question of not liking it!...stuffed way is always so tasty!..
