Aloo Palak (Curried Spinach with Potatoes)

Another new school for Little M. She is in Sr KG now. She is back in school after a 4 month hiatus. Expected some resistance but she was quite happy to go back, even if it was to a new one. Came back home declaring "I love my school and I love my teacher!" Hope the love lasts! :)

Aloo Palak

Ingredients:

2 medium potatoes, cubed and boiled
1 big bunch spinach, cleaned & chopped
1 tbsp chopped cilantro (optional)
1 large onion, chopped
2 medium tomatoes, chopped
6-7 pods garlic, peeled, crushed and chopped
1 tsp each cumin powder, coriander powder, garam masala powder
Red chili powder and salt, according to taste
1 tsp Kitchen King Masala (optional)
1/4 cup milk
2 tsp cooking oil

Method:

In a pan, heat oil. Add chopped onions and fry until brown.
Add crushed garlic, spinach and cilantro (if using). Sauté for 2-3 minutes.
Stir in tomatoes and all the powders, except Kitchen King masala.
Cover and cook until soft.
Let cool and grind to a paste, adding a little water if required.
Transfer back to the pan, adding milk and the boiled potatoes. (I just nuked the cubed potatoes with a little water for 4-5 minutes in the microwave)
Bring to a boil, stirring often. Cover and cook on low for 5 minutes.
Adjust seasonings. Add KK masala at the end.
Serve aloo palak with chappatis.
