Here's a palak bhajiya recipe from my drafts, a quick tea time snack.

Ingredients:
A handful big spinach leaves, cleaned & wiped dry
Oil for deep frying
For the batter:
1/2 cup besan
1 tsp rice flour
1 tsp red chili powder
1 tsp jeera powder
1 tsp grated ginger
1 tsp warm oil
a pinch each of heeng and haldi
salt to taste
water for mixing
Method:
Mix the batter ingredients together to form a slightly thick, lump-free batter.
Dip each spinach leaf one by one in this batter and deep fry in hot oil until crispy brown.

Good to know you've settled back again ! I really admire how you move across continents with 2 kids ! One move and I feel I'm done !! I remember eating these bhajiyas in a little store on Brigade road in bangalore, thats perhaps the only time I've eaten these !
